Craig Ellison is well-known throughout the New Zealand commercial fishing industry. He is the Chairman of Seafood New Zealand, the organisation representing the interests of the commercial fishing sector, Chairman of Ngāi Tahu Seafood, and a director on Aotearoa Fisheries Limited (Moana New Zealand) and Sealord Group. Craig is Chairman of Wellington Zoo, and Chair of Poutama Trust and serves on the board of the National Science Challenge Kia kotahi mai - Te Ao Pūtaiao me Te Ao Hangarau. He maintains a strong interest in governance, science, and Māori collaboration in business.  He has previously served on the Board of Airways New Zealand, NIWA, the Trade Liberalisation Network, New Zealand Trade and Enterprise, and as a Commissioner with the Treaty of Waitangi Fisheries Commission (Te Ohu Kai Moana). He was project leader for the Tuhono Whenua: Red Meat Coalition.
